It's possible that St. Nicholas was well aware that Fletcher didn't like marzipan last year. It's also possible that St. Nicholas knows that marzipan is dairy and soy free, and therefore wasn't worried about the pigs going to waste. It's possible.

Silly St. Nicholas also gave Kranshie a gingerbread cookie in her stocking. "I'll eat it for her", offered her generous big brother.
